
I baked a treat today that I use to eat often but life got busy. You know family, work, church, life. But with having a week plus, half way off. I say halfway because I caught up on projects that I was trying to get done but couldn’t. I also had meetings online instead of in person. But come Saturday, I was able to have time to do something that brings me a lot of joy. Baking!
I made an applesauce cake. (5 to mix and 40 minutes to bake.) The house smells like apples, cinnamon, baked goods, oh my. I was watching an episode of “The Waltons”, do you remember the Waltons? Well Olivia was known for her Applesauce Cake. So that made me think about my recipe for an Applesauce Cake. It isn’t anything fancy. No eggs, No milk (although a cold glass of milk goes nicely with a slice of hot Applesauce Cake!) so you can see why it was easy to make, even in the depression times. My grandma Polly knew all about the Depression times and Applesauce Cake!
Let’s get started!
Preheat oven at 350. Grease then flour bottom and sides of a 8×8 baking pan.
-cream 1/2 a stick of butter with a cup of white sugar.
-add one cup of applesauce
-add 2 cups of all-purpose flour plus 1 teaspoon of baking soda plus 1 teaspoon of cinnamon. Mix all together. (You can add other goodies to it. i.e. nuts, raisins, sliced apples, cloves or other spices, etc)
Pour batter into prepared pan. Bake for 40 minutes or until toothpick in the center of the cake comes out clean.
Let it cool a little. But I love a piece of my applesauce cake while warm with a light dusting of powdered sugar and a glass of cold milk. Good times!

Like I said it isn’t fancy but up here in the mountains, a warm piece of cake on a cool evening, is truly a blessing.
Other things I like to do and mostly learned from my ancestors here in the mountains are canning, cooking, baking, making biscuits and gravy, making our own extracts (vanilla, walnut, etc) , growing a garden and more.
I’m not Grandma Walton but I am a grandma and I do live in the mountains of NC. (My family has been here in the mountains of NC since before 1820.) Maybe, I will start sharing some things that I was taught from my Grandmothers and their grandmothers.
